Historically, there are many legends associated with the development of Biryani. The most popular is the story related to Mumtaz Mahal, wife of Shah Jahan, the fifth emperor. Upon visiting the troops, Mumtaz found that the Mughal soldiers looked malnourished. To provide sustenance to the soldiers, she asked the chefs to prepare a dish with meat and rice. A new meal was whipped up with an amalgamation of fragrant spices and cooked over a wood fire. Thus the creation of Biryani. Other legends ranging from Taimur, Nizams of Hyderabad, and Nawabs of Lucknow; these individuals are not only known for their appreciation of this delicacy but also played a pivotal role in the development, creation, and evolution of Biryani we know and enjoy today.
